LGCast.xcframework & GStreamerForLGCast.xcframework are missing arm64 architecture for simulators

LGCast.xcframework & GStreamerForLGCast.xcframework contain builds for "arm64" and "x86_64-simulator" but are missing a build for "arm64-simulator".
This makes it impossible to run it on a simulator with a M1 chip (instead of Intel).

@dylancom because GStreamer SDK support only intel chip (x86_64) for simulator
