Would it be possible to provide a discount for a product variant?

I'm not sure I totally understand your question. Where would you be showing the variants?

How are you handling it right now in Simple Commerce? Do you have a field on each variant specifying if it's eligible for a discount and for how much?

Discount Types control how discounts are calculated - not who/what is eligible for a discount.

yes we are doing it like this

and we ahve a minimun price for the overview page

Okay, I'd probably keep it the same way you have it on the product page, but use a custom discount type to handle the "minimum price" after sale part.
