Update API docs for v2026.1

This PR is to track changes that we need to make to the API docs for v2026.1. If a PR makes a change to the API and simultaneously changes the API docs, then that change doesn't need to be listed here.

⚠️ If there is a breaking change to the API, an issue should be filed with pyODK.

• Change geojson API query parameters to match OData query parameters #1396

• Bug about POST entity creation section needing to be moved up (see comment below)

There's something weird with the docs where the entity creation API endpoint says "creators" in it. I think because the "creators" url was inserted in the middle of the base entities endpoint documentation.
