Bump `chokidar` to v5

pnpm recently added a feature trustPolicy, and it is causing problem with chokidar@4.0.3

The author published v5 with proper provenance statement:

Upgrade to 5.0.0 to fix this issue.

We can only do this if the vs code built in node version is high enough, and for svelte-check it would be a breaking change because of the increased node version requirement
