Instead of wrapping in quotes:

DEFAULT_FROM_EMAIL='name example@example.ru'

You need to use \ as an escape character for each character that would stop the shell from evaluating the line as a single string:

DEFAULT_FROM_EMAIL=name\ example@example.ru
