Created this PR to replace #109 since it has been stalled for ages, and we've changed how we do platform files.
I based this loosely off of our kitty platform generation and catppuccins theme file. I tested it out briefly, but since I don't use alacritty I can't say for certain everything looks right.
It might be a good idea to update the file in https://github.com/alacritty/alacritty-theme.
