updated book.toml

• includes mdbook pre-processor for latex (https://github.com/lzanini/mdbook-katex)

rearranged docs structure

• background (has our prior work, thinking this section will have background on the work we did thats separate from the user guide)
• operation (updated to say coming soon...)

new files

• introduction (blurb we wrote ages ago about carrie, with photo (i think i tracked with git lfs correctly?)
• overview (background research, purpose of carrie)
• kinematics (start of kinematic model for carrie)
