PS can you please update this. or document the steps i need to take to find the values that are valid? From previous error messages it looks like it depends on literal gem path structure so it would be helpful to say "the version selector drop down from https://shopify.dev/docs/api/admin-graphql/latest may not be a valid value, you must select from https://github.com/Shopify/shopify-api-ruby/tree/main/lib/shopify_api/rest/resources depending on the installed version of gem"

It would be REALLY nice if this key was optional, or offer a latest stable that is supported since you already have unstable. It's super annoying this initializer asserts instead of just having an opinion with a sane default.
