Docs: Update Python scripts table to reflect newer files

Description

This PR fixes the 404 (not found) issue by removing links to deleted files that were causing 404 errors and adds links and descriptions for the newer python automation scripts.

Changes:

• Added links and descriptions for the newer automation scripts.
