docs: update README to SDK 1.0.1 - #22

The published images now target Zephyr SDK 1.0.1 (#21). Also drop the hardcoded package version ID from the example image link, since it was pinned to the 1.0.0 arm image. Co-Authored-By: Claude Opus 5 (1M context) <noreply@anthropic.com>

Follow-up to #21, which bumped the publish workflow matrix to Zephyr SDK 1.0.1. The README still documented 1.0.0 tags and build commands.
Also replaces the hardcoded package version ID in the example image link (
/pkgs/container/zephyr/292819795), which pointed at the 1.0.0armimage, with a tag-filtered listing link that will not go stale on the next bump.🤖 Generated with Claude Code
