Remove FluentAssertions dependency

Summary

• drop the FluentAssertions package from the shared props and test project dependencies
• replace FluentAssertions usage across audio tests with xUnit asserts and a new ArrayAssert.EqualApprox helper
• remove the old FluentAssertions-based extension utilities that were no longer needed
